How to store vegetables and greens

How much, where and how to store vegetables in the apartment depends on what temperature, humidity and light level needs a specific kind. So, for example, cabbage and carrots should be stored in the refrigerator, and potatoes and onions - in the drawer of the kitchen cupboard, some products should be put in sealed containers, and some - left in nets or paper bags.

A few general principles

  • Keep the vegetables separate from the fruit. The fact is that apples, pears, bananas and apricots secrete ethylene - a gas that accelerates the ripening and spoilage of nearby fruits and vegetables.
  • Keep separately tomatoes, potatoes and peppers (including separately from each other). They also emit ethylene and strongly affect the taste and quality of the rest of the vegetables. So, for example, next to a tomato carrots and beets will become bitter, and potatoes will sprout quickly next to the pepper.
  • Always cut off the tops of root crops. Before you combine carrots, beets, radishes, turnips and other root crops in the refrigerator, you need to trim their tops, leaving only a small tail of 2.5 cm in length to protect the vegetable from drying out. Also, before storage, the roots should be cleaned with a soft brush from the remnants of the earth.
  • Wash vegetables and herbs (except for greenery) only before use, and not in advance. Wash all the products at once before laying in the refrigerator is very convenient, but it turns out that this accelerates the spoilage of plant products. But the greens can be washed before storage by soaking them in a sink with water.
  • Store vegetables in loose and perforated packages and containers. Make sure that the vegetable storage bag has holes to ensure a good flow of air. Fruits should be free in the package, because the closer they are to each other, the faster they start to rot.

Potato

Where and how to store potatoes: potatoes do not tolerate prolonged storage in the refrigerator, because at low temperatures, the starch begins to turn into sugar. But the potato loves the dark (it becomes tasteless and even toxic in light), cool (+ 5 ° C to + 7 ° C) and dry (no more than 85% moisture) places. Therefore, for storage of large reserves, cellars, pantries, insulated garages or balconies are best suited. Small stocks of potatoes can be stored in an apartment in a kitchen cupboard or, say, under a sink. A week's supply of potatoes can live on the bottom shelf of the refrigerator. Before you send the tubers for storage, they need to sort out, leaving only healthy and strong potatoes (winter stocks should be sorted 2 more times during the winter).

Timing: 3 weeks in an apartment, and up to 5-6 months - in ideal conditions.

Tomatoes

In a refrigerator to store tomatoes it is impossible - at temperature below 10 degrees they lose aroma and become insipid. If you need to store tomatoes for more than three days, then you can fold them on the bottom shelf of the refrigerator, and then restore the flavor and taste by holding the fruit at room temperature for about 1 day.

Timing: 3 days - the optimal shelf life for ripe tomatoes.
